General Manager

  • Ethan Register, General Manager of Harrison's Kitchen & Bar and Hotel Indigo, is originally from Georgia—Go Dawgs! Now a proud local, Ethan has lived in Bay County for over 22 years, graduating from Florida State University-Panama City (FSU-PC) with a degree in business administration. With extensive experience in hospitality, including his prior role as COO for Hilton Inc., Ethan is deeply committed to both his community and his professional career. He serves as City Councilman for Ward 2 in Panama City Beach and is actively involved in local business and civic life. Ethan currently serves on the PCB Tourism Development Council and the Military Affairs Committee and has previously served on the PCB Planning Board and Panama City Economic Development Board. Outside of work, Ethan enjoys spending time with his wife, Heather, and their two daughters, as well as golfing, hunting, and fishing.

Keith Kubisz

Director of Food & Beverage

  • Bringing over 30 years of experience is Food and Beverage Director, Keith Kubisz, who oversees both Harrison’s Kitchen & Bar and Hotel Indigo. Most recently, Keith served as Director of Operations and Executive Food and Beverage Director for Hilton Inc., where he managed three properties. A proud Bay County resident for over three decades, he lives with his wife, Monica, and their two children, Zachary and Jeremy. He is also a grandfather to two grandsons. In addition to his career in hospitality, Keith is an avid runner, having completed eight marathons, including three Dopey Challenges at Walt Disney World, and more than 50 half marathons.

  • Harrison’s Kitchen & Bar welcomes Executive Chef Leo Ortiz, a seasoned culinary professional with experience at The Ritz-Carlton, Disney, and top dining establishments. Inspired by his Puerto Rican roots and a passion for fresh, locally sourced ingredients, Ortiz crafts memorable dining experiences that blend elevated flavors with a welcoming atmosphere.

    After honing his skills at the Culinary Institute of America, he spent over a decade at Disney before making the Emerald Coast his home. A dedicated father of five, Ortiz understands the importance of family-friendly dining while also delivering high-quality, refined cuisine.
